What is it about music that makes it so appealing? Essentially all it is, is noise and talking with melody, what is it about the human brain that creates pleasure upon hearing certain noises...frequencies etc...

More has to do with science TBH.

It has a lot to do with hormones, adrenaline, and emotions and how they and the human body and brain are all connected. For example, the reason why I like video game music and movie music is because it gets my adrenaline flowing or sends a chill down my spine and give me that "epic" feeling. It has also been proven in a study that music helps some people concentrate on their task at hand.
