What apps do you use/recomend?

I've already bought 'I am T-Pain', 'Smule Ocarina', 'Angry Birds' and '5-0 Radio'.

Any others I should look at?

Oh, and for sheer hilarity's sake, get MiniPiano. Utterly useless, but totally random 8|

And the FB app also alerts you on FB notifications using the iPhone notifications system, so when someone comments on a status, it'll tell you like you were getting a text message. It's handy if you want to stay in touch.

If you like some of the classics, (not sure of your tastes) get Classics 2 Go; many, many out of copyright books to read. I love reading a bit of Sherlock Holmes when I'm bored of my games 8|

Also, have a look at Balloons (yes the monkey and balloons game).
You almost did, didn't you?
