Doesn't "Final Fantasy" just mean they couldn't come up with another name forthe game? It's basically just a long string of unrelated games, right?

While each numbered game has it's own story, in it's own separate universe, there are bunch of common threads that run through them all:

- Moogles
- Chocobos
- Summons

If I'm not mistaken the reason the series is called "Final Fantasy" is that Square was fucking broke, and if their latest game didn't sell they'd have to close their doors. Hence the game got the name "Final Fantasy".
