All of the Hitman soundtracks (with the Silent Assassin one being the best)
Freedom Fighters
Dawn of War
Call of Duty (ze original)
and the classic Battlefield theme (altough the MEC remix from BF2 aint bad)
All of these are what I found to be the best ones (ive heard) altough I have faith in Jesper Kyds abilities to produce damn good music (e.g Assassins Creed OST was made by him and it was good)

Ace Comat 6: Fires of Liberation earns a special mention for its signature track, The Liberation of Gracemeria, which is possibly the most awesome single piece I can think of with its slow build, sweeping scape, and soaring theme. The rest of the OST is good but rarely if ever approaches this peak.
I'm eagerly awaiting the Command and Conquer: Red Alert 3 soundtrack as well. Pure rock has never been my thing and while I can appreciate Frank's work is truly brilliant (I love Hell March along with everyone else) I rarely listen to the full game soundtrack because it's not really for me in most moods. From the large amount I've heard of the RA3 soundtrack on YouTube though, it seems diverse, driving, and a lot of fun.

Jeff Van Dyke did some really good (and very substantial) music for Medieval II: Total War. Very, very appropriate to the game and one of the things which best lends it its truly epic feel.
Last honourable mentions go to Jesper Kyd for his somewhat eerie but strongly evocative work for Freedom Fighters (which a large number of people will come to be familiar with, though probably unknowingly, later this month), and Age of Empires III as MR.Kim has already mentioned.
(As a side note, a new millennium dawns!)
