what's the difference between the nvidia geforce 9800 gt and gigabyte geforce 9800 gt (except the price)

NVIDIA do not actually make graphics cards, they only make reference cards which other manufacturers use to make their own. A 9800GT is a 9800GT, no matter what manufacturer it is from. However, some cards differ in heat tolerance etc so some cards are better than others for these purposes. ATi do the same with their cards as well, but in both cases the cards are usually referred to by their NVIDIA given names.

so you are saying that both of them will give me the same performance (just one of them will get heated faster?)?

Yes, but a cooler piece of hardware will perform better.
